Method
Dough Preparation
- 1
Mix the Dough
In a large mixing bowl, combine the glutinous rice flour, sugar, and 1 cup of water. Stir until the mixture forms a smooth dough. If the dough is too dry, add a little more water, one tablespoon at a time until it reaches the right consistency.
- 2
Rest the Dough
Cover the bowl with a damp cloth and let the dough rest for about 30 minutes. This allows the flour to absorb the water fully and makes the dough easier to work with.
Filling Preparation
- 3
Prepare the Filling
While the dough is resting, take the red bean paste and divide it into small balls, approximately 1 tablespoon each. Roll them into smooth balls and set aside.
Forming the Balls
- 4
Shape the Balls
Once the dough has rested, divide it into equal portions, about the size of a golf ball. Flatten each piece of dough in your palm and place a red bean paste ball in the center. Carefully wrap the dough around the filling and pinch to seal. Roll the filled dough ball in your hands to smooth it out.
- 5
Coat with Sesame Seeds
Pour the sesame seeds into a shallow dish. Roll each dough ball in the sesame seeds, ensuring it is fully coated. Press gently to help the seeds adhere.
Frying
- 6
Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium heat. You can test if the oil is ready by dropping a small piece of dough into the oil; if it bubbles and rises to the surface, the oil is hot enough.
- 7
Fry the Sesame Balls
Carefully place the coated dough balls into the hot oil, a few at a time, to avoid overcrowding. Fry for about 4-5 minutes, or until they are golden brown, turning occasionally for even cooking.
- 8
Drain and Serve
Once golden and crispy, remove the sesame balls with a slotted spoon and drain them on paper towels to remove excess oil. Serve warm.
