Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a bowl, mix together soy sauce, lime juice, minced garlic, minced ginger, brown sugar, and curry powder.

  2. 2

    Marinate the Chicken

Cut the chicken breast into bite-sized pieces and add it to the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.

Making the Peanut Sauce

  1. 3

    Combine Ingredients

In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste.

  2. 4

    Cook the Sauce

Stir until smooth and heated through. Allow it to simmer for about 5 minutes, stirring occasionally. Remove from heat and set aside.

Grilling the Chicken

  1. 5

    Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. 6

    Skewer the Chicken

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

  3. 7

    Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has grill marks.

Serving

  1. 8

    Plate the Dish

Serve the grilled chicken skewers on a plate with a side of peanut sauce for dipping.

  2. 9

    Garnish

Garnish with chopped cilantro and serve with lime wedges on the side.
