Marinating the Chicken

Prepare the Marinade
In a bowl, mix together soy sauce, lime juice, minced garlic, minced ginger, brown sugar, and curry powder.

Marinate the Chicken
Cut the chicken breast into bite-sized pieces and add it to the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.
Making the Peanut Sauce

Combine Ingredients
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste.

Cook the Sauce
Stir until smooth and heated through. Allow it to simmer for about 5 minutes, stirring occasionally. Remove from heat and set aside.
Grilling the Chicken

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Skewer the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
