Method

Thai Fried Rice

    Prepare the Ingredients

    Gather all ingredients and prepare them by chopping, dicing, or slicing as indicated.

    Cook the Pork

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of vegetable oil. Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

    Add Eggs

    Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble until fully cooked, then mix with the vegetables.

    Combine Rice and Pork

    Add the cooked jasmine rice and the cooked pork back into the skillet. Pour in the soy sauce, and stir well to combine. Cook for another 3-4 minutes, stirring frequently.

    Add Tomatoes and Season

    Gently fold in the diced tomato and chopped cilantro. Season with salt and pepper to taste. Cook for an additional minute until heated through.

    Serve

    Remove from heat and serve hot, garnished with extra cilantro if desired.

Thai Pineapple Fried Rice
