Bring a pot of water to a boil. Add rice noodles and cook according to package instructions until al dente (usually about 5-7 minutes). Drain and rinse with cold water to stop cooking. Set aside.
Marinate Pork

In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, and black pepper. Mix well.

Slice the pork tenderloin into thin strips. Add the pork to the marinade and let it sit for at least 30 minutes to absorb the flavors.
Cook Pork and Vegetables
