Prepare the Pork
Slice the pork tenderloin into thin strips. Season with salt and pepper.

Chop the Vegetables
Dice the onion and carrots. Mince the garlic. Chop the green onions, separating the white and green parts.

Scramble the Eggs
In a bowl, beat the eggs with a little salt. Heat a tablespoon of vegetable oil in a large skillet or wok over medium heat, and scramble the eggs until fully cooked. Remove and set aside.

In the same skillet or wok, add another tablespoon of vegetable oil. Add the sliced pork and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
