    In a large pot, combine coconut milk, Thai red curry paste, vegetable broth, brown sugar, and soy sauce. Stir well to combine all ingredients and bring to a gentle simmer over medium heat.

    Once the curry base is simmering, add the sliced bell pepper, carrot, zucchini, and snap peas to the pot. Stir to coat the vegetables in the curry sauce.

    Incorporate Pineapple

    Add the pineapple chunks to the pot and stir gently. Allow the mixture to simmer for an additional 10 minutes, or until the vegetables are tender but still crisp.

    Remove the pot from heat. Serve the Pineapple Thai Curry in bowls, garnished with fresh basil leaves and lime wedges. Squeeze lime juice over the curry for added flavor.
