Chicken Marinade

Cooking

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a medium bowl, whisk together the peanut butter, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, and black pepper until smooth.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or preferably overnight for best flavor.

Cooking the Chicken

  1. 3

    Cook the Chicken

Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off, and place the chicken in the skillet.

  2. 4

    Sear the Chicken

Cook the chicken for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown color. The internal temperature should reach 165°F (75°C).

  3. 5

    Add Toppings

Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Slice the chicken and serve it over a bed of cooked rice, garnished with chopped green onions and cilantro.
