Marinating the Pork

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, sesame oil, and black pepper. Whisk until the sugar is dissolved.

    Marinate the Pork

    Slice the pork tenderloin into thin strips and add to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.

Cooking the Vegetables

    Prepare the Vegetables

    While the pork is marinating, wash and slice the bell pepper, onion, and carrot. Set aside.

    Stir-Fry the Vegetables

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced bell pepper, onion, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp. Remove from the pan and set aside.

    In the same skillet or wok, add the marinated pork along with the marinade. Cook over medium-high heat for about 5-7 minutes, or until the pork is browned and cooked through, stirring occasionally.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Once the pork is cooked, add the slurry to the skillet and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens.

Final Assembly

    Add the cooked vegetables back into the skillet with the pork. Stir to combine and heat through for another 1-2 minutes.

    Remove from heat, sprinkle with chopped green onions, and serve hot over rice or noodles.
