    Marinate the Chicken

    In a large bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, and ground ginger. Stir well until the sugar dissolves. Add the chicken breasts and ensure they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes.

    Cook the Chicken

    Heat a large skillet or wok over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 5-7 minutes on each side or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

    Stir-fry the Vegetables

    In the same skillet, add the sliced bell pepper, onion, and carrot. Stir-fry for about 3-4 minutes until they are slightly tender but still crisp. Pour in the reserved marinade and bring to a simmer.

    Combine Chicken and Vegetables

    Once the vegetables are cooked, return the sliced chicken to the skillet. Toss everything together to coat the chicken and vegetables in the sauce. Cook for an additional 2 minutes.

    Serve

    Transfer the Mongolian chicken to a serving dish. Garnish with chopped green onions and sesame seeds before serving. Enjoy your mild Mongolian chicken!
