    Prepare the Beef

    Slice the flank steak against the grain into thin strips, about 1/4 inch thick.

    Marinate the Beef

    In a bowl, combine 1/4 cup of soy sauce, brown sugar, and cornstarch. Add the sliced beef and toss to coat. Let it marinate for at least 30 minutes.

    Prepare the Sauce

    In a separate bowl, mix the remaining soy sauce, water, and sesame oil. Set aside.

    Cook the Beef

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in batches, cooking until browned, about 2-3 minutes per side. Remove the beef and set aside.

    Add Aromatics

    In the same skillet, add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

    Combine and Simmer

    Return the beef to the skillet, pour in the prepared sauce, and bring to a simmer. Cook for 5 minutes, allowing the sauce to thicken.

    Add Green Onions

    Slice green onions and add them to the skillet. Stir well and cook for an additional 2 minutes.

    Serve the Mongolian beef hot over rice or noodles.
