    Prepare the Sauce

    In a small bowl, whisk together soy sauce, rice vinegar, sugar, cornstarch, water, and sesame oil until smooth. Set aside.

    Prepare the Ingredients

    Dice the bell pepper and zucchini, chop the green onions, and mince the garlic and ginger. Set all ingredients aside.

    Cook the Shrimp

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the shrimp, sprinkle with salt and black pepper, and stir-fry for 2-3 minutes until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.

    Stir-Fry Vegetables

    In the same skillet, add another tablespoon of oil if necessary. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add diced bell pepper and zucchini, and stir-fry for an additional 3-4 minutes until they are tender but still crisp.

    Combine and Finish

    Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to coat. Add the chopped green onions and roasted peanuts, and stir-fry for another 1-2 minutes until everything is heated through and the sauce has thickened slightly.
