Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Jalapenos

    Wash and slice the jalapenos in half lengthwise. Remove the seeds if you prefer a milder flavor.

    Make the Filling

    In a mixing bowl, combine cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.

Cooking

    Stuff the Chicken

    Take each chicken breast and carefully slice a pocket into the side. Stuff each pocket with the cheese mixture and a jalapeno half.

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown.

    Bake the Chicken

    Transfer the seared chicken breasts to a baking dish and cover with foil. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Serving

    Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve warm with your favorite sides.
