Preparation of Ice Cream

    Scoop the Ice Cream

    Using an ice cream scoop, place 4 scoops of vanilla ice cream onto a tray or plate. Make sure to keep them spaced apart.

    Freeze the Ice Cream

    Cover the scoops with plastic wrap and place them in the freezer for at least 2 hours, or until they are firm.

Coating and Batter Mixing

    Mix the Coating

    In a bowl, combine the crushed cornflakes, coconut flakes, and sugar. Set aside.

    Prepare the Batter

    In another bowl, whisk together the all-purpose flour, cornstarch, baking powder, egg, and milk until smooth.

Coating the Ice Cream

    Coat the Ice Cream

    Once the ice cream scoops are firm, remove them from the freezer. Roll each scoop in the batter until fully coated, then immediately roll them in the coating mixture of cornflakes and coconut flakes until well covered.

    Place the coated ice cream back in the freezer for another 1-2 hours to set the coating.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

    Carefully drop one coated ice cream scoop into the hot oil at a time. Fry for about 10-15 seconds until golden brown. Remove and drain on paper towels.

Serving

    Serve the fried ice cream immediately, topped with chocolate syrup, whipped cream, and cherries as desired.
