Preparation of Shrimp

Prepare the Shrimp
In a bowl, season the peeled and deveined shrimp with salt and black pepper. Let it marinate for about 15 minutes.

Coat the Shrimp
In a separate bowl, mix the cornstarch and beaten egg. Dip each shrimp into the cornstarch mixture, ensuring they are well coated.
Frying the Shrimp

Heat the Oil
In a large skillet, heat the oil over medium-high heat until hot.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
Making the Dynamite Sauce

Mix the Sauce
In a medium bowl, combine mayonnaise, Sriracha sauce (to taste), sweet chili sauce, lime juice, garlic powder, and cayenne pepper. Mix until smooth and well combined.

Garnish the Sauce
Add sliced green onions to the sauce and stir to incorporate.
Serving

Serve the Shrimp
Toss the fried shrimp in the dynamite sauce until they are well coated. Serve immediately with extra sauce on the side.
