Prepare the Noodles
Soak the wide rice noodles in hot water for about 30 minutes or until softened. Drain and set aside.

Prepare the Proteins
If using chicken, thinly slice the chicken breast. If using tofu, cut it into cubes. Beat the eggs in a bowl.
Cooking

Stir-fry the Proteins
Heat 1 tablespoon of vegetable oil in a large wok over medium-high heat. Add the chicken or tofu and stir-fry until cooked through, about 5-7 minutes. Push to the side and add the beaten eggs, scrambling until cooked. Mix with the protein.

Add the Vegetables
In the same wok, add another tablespoon of vegetable oil. Add bell pepper, carrot, and broccoli. Stir-fry for 3-4 minutes until the vegetables are just tender.

Finish with Basil and Green Onions
Remove from heat and stir in the fresh basil leaves and sliced green onions. Season with salt and pepper to taste.

Plate the Dish
Serve the drunken noodles hot, garnished with additional basil if desired.
