Preparing the Broth

Roasting the Aromatics
Preheat your oven to 200°C (400°F). Cut the onion in half and the ginger into slices. Place them on a baking tray and roast in the oven for about 15-20 minutes until slightly charred.

Simmering the Broth
In a large pot, add the beef (or chicken) bones and water. Bring to a boil and then reduce to a simmer. Add the roasted onion and ginger, star anise, cinnamon stick, cloves, fish sauce, sugar, and salt. Let it simmer for at least 1.5 to 2 hours.

Straining the Broth
Once the broth is ready, strain it through a fine mesh sieve to remove the solids. Keep the broth warm over low heat.
Cooking the Noodles and Serving

Cooking the Noodles
In a separate pot, bring water to a boil. Add the rice noodles (or glass noodles) and cook according to the package instructions, usually around 3-5 minutes. Drain and set aside.

Assembling the Pho
In serving bowls, add a portion of the cooked noodles. Ladle hot broth over the noodles. Top with bean sprouts, fresh basil, cilantro, sliced green onions, lime wedges, and jalapeños.

Serve the pho with Sriracha and Hoison sauce on the side for guests to add to taste.
