Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Prepare the Proteins
Slice the chicken breast and beef sirloin into thin strips. Season with salt and pepper. Rinse the shrimp under cold water and pat dry.

Prepare the Vegetables
Julienne the carrot and slice the red bell pepper into thin strips. Chop the green onions and set all vegetables aside.

Cook the Proteins
In a large skillet or wok, heat 2 tablespoons of oil over high heat. Add the chicken and beef, cooking for 3-4 minutes until browned. Add the shrimp and cook for an additional 2-3 minutes until they turn pink. Remove the proteins from the skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add a little more oil if needed. Add the carrots, red bell pepper, and green onions, and stir-fry for about 2 minutes until they are slightly tender.

Combine Everything
Add the drained rice noodles to the skillet with the vegetables. Pour in the fish sauce, soy sauce, brown sugar, lime juice, and Sriracha sauce. Toss everything together until well combined and heated through.

Finish and Serve
Return the cooked proteins to the skillet and mix well. Remove from heat. Serve hot, garnished with crushed peanuts, fresh cilantro, and lime wedges.
