Noodles

Method

Preparation

  1. 1

    Cook the Noodles

In a large pot of boiling salted water, cook the lo-mein noodles according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Vegetables

While the noodles are cooking, wash and slice the bell pepper, julienne the carrots, and separate the broccoli into florets. Rinse the snap peas and chop the green onions.

  3. 3

    Prepare the Protein

If not already done, slice the cooked chicken and peel and devein the cooked shrimp. Beat the eggs in a small bowl.

Cooking

  1. 4

    Stir-fry the vegetables

In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add garlic and ginger, stir-frying for about 30 seconds until fragrant. Add bell pepper, carrots, broccoli, and snap peas, stir-frying for about 3-4 minutes until tender-crisp.

  2. 5

    Add the chicken and shrimp

Add the sliced chicken and shrimp to the skillet with the vegetables. Stir to combine and cook for an additional 2-3 minutes.

  3. 6

    Scramble the eggs

Push the ingredients to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked, about 1-2 minutes.

  4. 7

    Combine the noodles

Add the cooked lo-mein noodles to the skillet. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Pour the sauce over the noodles and toss everything together until well combined and heated through.

  5. 8

    Season and Serve

Season with salt and pepper to taste. Garnish with chopped green onions before serving.
