Preparation

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and season with salt and black pepper. Set aside.

    Chop the Vegetables

    Dice the onion, bell pepper, and carrot. Mince the garlic and ginger.

    Prepare Optional Ingredients

    If using, cut the lime into wedges and set aside. Prepare red chili flakes if desired.

Cooking

    Heat the Oil

    In a large pan or wok, heat the vegetable oil over medium heat.

    Sauté Onions and Garlic

    Add the diced onion and minced garlic to the hot oil. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add Ginger and Vegetables

    Stir in the minced ginger, diced bell pepper, and diced carrot. Cook for another 3 minutes until the vegetables start to soften.

    Cook the Chicken

    Add the seasoned chicken pieces to the pan. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned on all sides.

    Add Coconut Milk and Curry Powder

    Pour in the coconut milk and sprinkle the curry powder over the chicken and vegetables. Stir well to combine.

    Simmer the Curry

    Reduce the heat to low and let the curry simmer for about 15 minutes, allowing the flavors to meld together.

    Adjust Seasoning

    Taste and adjust seasoning with additional salt, black pepper, or red chili flakes as desired.

    Garnish and Serve

    Once cooked, remove from heat and garnish with chopped cilantro. Serve hot with lime wedges on the side if desired.
