Preparation

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and set aside.

    Prepare the Aromatics

    Smash the lemongrass stalks with the back of a knife to release their flavor. Slice the galangal into thin pieces.

    Prepare the Vegetables

    Quarter the tomatoes and slice the mushrooms. Set aside.

Cooking

    Simmer the Broth

    In a large pot, bring the chicken broth to a boil over medium heat. Add the smashed lemongrass, kaffir lime leaves, and sliced galangal.

    Cook the Chicken

    Once the broth is boiling, add the chicken pieces and cook until they are fully cooked, about 5-7 minutes.

    Add Vegetables and Seasoning

    Add the sliced mushrooms, quartered tomatoes, and Thai bird's eye chilies to the pot. Stir in the fish sauce and let simmer for another 5 minutes.

    Finish the Soup

    Remove the pot from heat and stir in the lime juice. Adjust seasoning with sugar if desired and add the Thai chili paste for extra flavor.

    Ladle the soup into bowls and garnish with chopped cilantro. Serve hot.
