    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and set aside.

    Prepare the Vegetables

    Slice the mushrooms and chop the tomatoes. Set aside.

    Prepare the Aromatics

    Chop the lemongrass, slice the galangal, and set aside.

Cooking

    Cook the Base

    In a large pot, bring the chicken broth to a boil over medium heat. Add the chopped lemongrass, sliced galangal, and kaffir lime leaves. Simmer for 10 minutes to infuse the flavors.

    Add Chicken and Mushrooms

    Add the chicken pieces and sliced mushrooms to the pot. Cook for about 5-7 minutes, until the chicken is cooked through.

    Add Coconut Milk and Seasonings

    Stir in the coconut milk, chopped tomatoes, Thai red curry paste, fish sauce, and sugar. Let it simmer for another 5 minutes.

    Finish with Lime Juice

    Remove the pot from heat and stir in lime juice. Adjust the seasoning as needed.

Serving

    Ladle the soup into bowls, garnish with cilantro and sliced chili if desired. Serve hot.
