Cook the Chicken
In a large skillet, heat a tablespoon of sesame oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of sesame oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the diced tomato and cook for an additional 2 minutes.

Combine Ingredients
Add the cooked jasmine rice to the skillet. Stir well to combine with the vegetables. If making the pineapple fried rice, add the diced pineapple and chopped cashews at this stage.

Add Seasonings
Pour in the soy sauce, fish sauce, salt, and black pepper. Stir well to ensure all the rice is coated with the sauces. Cook for an additional 5 minutes, stirring occasionally.
Final Touches

Add Chicken and Garnish
Return the cooked chicken to the skillet and mix well. Remove from heat, and garnish with chopped cilantro and sliced green onions.

Serve hot in bowls, and enjoy your Thai fried rice with a sprinkle of cashews on top if desired.
