Preparation

  1. 1

    Prepare the Chicken

Slice the chicken breast into thin strips and season with black pepper and a bit of soy sauce. Let it marinate for about 15 minutes.

  2. 2

    Soak the Noodles

Soak the wide rice noodles in hot water for about 20-30 minutes until softened. Drain and set aside.

  3. 3

    Chop the Vegetables

Julienne the bell pepper and carrot. Chop the green onions and set aside. Wash the basil leaves and set aside as well.

Cooking

  1. 4

    Heat the Oil

In a large pan or wok, heat the vegetable oil over medium-high heat.

  2. 5

    Cook the Chicken

Add the marinated chicken to the pan and stir-fry until it's cooked through, about 5-7 minutes.

  3. 6

    Add Garlic and Vegetables

Add the minced garlic, bell pepper, and carrot to the pan. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.

  4. 7

    Mix in Noodles and Sauces

Add the soaked noodles, soy sauce, oyster sauce, chili paste, fish sauce, and sugar to the pan. Toss everything together, ensuring the noodles are well coated in the sauces.

  5. 8

    Final Touches

Add the green onions and basil leaves, and toss again. Cook for an additional 1-2 minutes until heated through.

  6. 9

    Serve

Serve hot, garnished with red chili flakes if desired.
