    Slice the bell peppers, carrots, zucchini, and onion into thin strips or bite-sized pieces.

    Peel and finely mince the garlic and ginger.

Cooking

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sauté until fragrant, about 1-2 minutes.

    Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.

    Stir in the yellow curry paste and cook for another 1-2 minutes, ensuring the chicken is well coated.

    Pour in the coconut milk and stir to combine. Bring to a gentle simmer.
