Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Mince Garlic and Ginger
Peel and finely mince the garlic and ginger.
Cooking

Sauté Aromatics
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sauté until fragrant, about 1-2 minutes.

Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.

Stir in the yellow curry paste and cook for another 1-2 minutes, ensuring the chicken is well coated.

Pour in the coconut milk and stir to combine. Bring to a gentle simmer.

Add the chopped bell peppers, carrots, and zucchini. Cook for 5-7 minutes until vegetables are tender.

Stir in the fish sauce, sugar, and lime juice. Adjust seasoning to taste.
