    In a large bowl, whisk together soy sauce, peanut butter, brown sugar, curry powder, lime juice, minced garlic, and ground ginger until smooth.

    Add the boneless chicken thighs to the marinade, making sure they are well-coated. Cover and refrigerate for at least 1 hour or overnight for best results.

    In a saucepan over medium heat, combine peanut butter, soy sauce, coconut milk, lime juice, brown sugar, red pepper flakes, and water. Stir until smooth and heated through, about 5 minutes. Set aside.

Grilling and Serving

    Preheat your grill to medium-high heat and lightly oil the grates.
