Preparation

  1. 1

    Prepare the Chicken

Cut the chicken breast into bite-sized pieces and season with salt and black pepper. Set aside.

  2. 2

    Chop Vegetables

Dice the onion, bell pepper, and garlic. Grate the fresh ginger. If using fresh pineapple, chop it into small chunks.

Cooking

  1. 3

    Sauté the Aromatics

In a large pan, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes.

  2. 4

    Add Garlic and Ginger

Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

  3. 5

    Cook the Chicken

Add the seasoned chicken pieces to the pan and cook until they are no longer pink, about 5-7 minutes.

  4. 6

    Combine with Curry Base

Stir in the curry powder and turmeric powder, ensuring the chicken is well coated. Pour in the coconut milk and stir to combine.

  5. 7

    Add Vegetables and Pineapple

Add the diced bell pepper and pineapple chunks to the curry mixture. Bring to a gentle simmer and cook for about 10 minutes, allowing the flavors to meld.

Serving

  1. 8

    Garnish and Serve

Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side. Enjoy your Chicken Pineapple Curry!
