Preparing the Broth

    Roasting the Ingredients

    In a large pot, add chicken bones, onion (cut in half), and ginger slices. Roast over medium heat until they are browned and fragrant, about 10-15 minutes.

    Simmering the Broth

    Add 3 liters of water to the pot. Bring to a boil, then reduce to a simmer. Add the cinnamon stick, star anise, cloves, fish sauce, and salt. Simmer for at least 1.5 to 2 hours, skimming off any foam or fat that rises to the surface.

Preparing the Noodles and Toppings

    Cooking the Noodles

    While the broth is simmering, cook the rice noodles according to package instructions. Drain and set aside.

    Cooking the Chicken

    In a separate pot, boil water and poach the chicken breasts for 15-20 minutes or until fully cooked. Remove, let cool, and then slice thinly.

    Preparing the Garnish

    Prepare the toppings by washing the bean sprouts, slicing the jalapeño pepper, and chopping the green onions. Cut the lime into wedges.

Assembling the Pho

    Serving the Pho

    In a bowl, add a portion of cooked noodles. Top with sliced chicken, bean sprouts, fresh basil leaves, sliced jalapeño, and green onions. Ladle the hot broth over the top and serve with lime wedges on the side.
