Preparation

    Soak the Noodles

    If using regular rice noodles, soak them in warm water for about 30 minutes or until soft. If using glass noodles, soak them in warm water for about 15 minutes until they become translucent.

    Prepare the Sauce

    In a small bowl, combine soy sauce, fish sauce, tamarind paste, sugar, and lime juice. Mix well until the sugar dissolves.

    Prep the Vegetables

    Julienne the carrot, chop the green onion, and slice the red bell pepper. Rinse the bean sprouts and set all vegetables aside.

Cooking

    Cook the Chicken

    Heat vegetable oil in a large pan or wok over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.

    Stir-Fry the Vegetables

    Add the julienned carrot, sliced red bell pepper, and chopped green onion to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

    Add Noodles and Sauce

    Drain the soaked noodles and add them to the pan along with the prepared sauce. Toss everything together and cook for an additional 3-5 minutes until the noodles are heated through and well-coated with the sauce.

    Finish with Bean Sprouts

    Add the bean sprouts to the pan and toss gently for another 1-2 minutes until they are slightly wilted but still crunchy.

Serving

    Plate and Garnish

    Serve the Chicken Pad Thai on plates. Garnish with crushed peanuts, chopped cilantro, and lime wedges on the side.
