Preparation

    Cook the Chicken

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the diced chicken breast and cook until browned and fully cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add a bit more sesame oil if necessary. Pour in the beaten eggs and scramble until just set. Remove and set aside with the chicken.

Cooking

    Stir-Fry the Vegetables

    In the same skillet, add the green peas, diced carrots, sliced green onions, and diced bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

    Combine Ingredients

    Add the cooked rice, chicken, and scrambled eggs to the skillet with the vegetables. Stir to combine.

    Season the Fried Rice

    Pour in the soy sauce, oyster sauce, and fish sauce (if using). Stir well to ensure all ingredients are evenly coated. Adjust seasoning with salt and black pepper to taste.

    Add Pineapple (if making Thai Pineapple Fried Rice)

    If you are making Thai Pineapple Fried Rice, fold in the pineapple chunks at this stage and stir-fry for an additional 2-3 minutes.

Serving

    Garnish and Serve

    Serve the chicken fried rice hot, garnished with chopped cilantro and lime wedges on the side.
