Preparation

    Prepare the noodles

    In a large pot, bring 2 cups of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the beef

    Thinly slice the beef sirloin against the grain into bite-sized strips.

    Prepare the vegetables

    Slice the bell pepper, julienne the carrot, and chop the broccoli into bite-sized florets. Slice the green onions.

Cooking

    Stir-fry the beef

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove from the skillet and set aside.

    Stir-fry the vegetables

    In the same skillet, add the garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add the broccoli, bell pepper, and carrot. Stir-fry for another 3-4 minutes until the vegetables are tender yet crisp.

    Combine and sauce

    Return the beef to the skillet with the vegetables. Add the cooked noodles and pour in the soy sauce, oyster sauce, sesame oil, and black pepper. Toss everything together and stir-fry for an additional 2-3 minutes until heated through and well combined.

Serving

    Garnish and serve

    Remove from heat, garnish with sliced green onions, and serve immediately.
