Preparing the Broth

Roast the Bones
Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for about 30 minutes, turning halfway through, until browned.

Simmer the Broth
In a large pot, combine the roasted bones and water. Bring to a boil, then reduce to a simmer. Skim off any foam that rises to the surface.

Season the Broth
After simmering, strain the broth into another pot. Stir in fish sauce and salt to taste. Keep warm.
Preparing Noodles and Toppings

Cook the Noodles
In a separate pot, bring water to a boil. Add the rice noodles or glass noodles and cook according to package instructions until tender. Drain and set aside.

Prepare the Toppings
Slice the lime, jalapeños, and green onions. Arrange fresh basil leaves, bean sprouts, and sliced beef on a serving platter.
Assembling the Pho

Serve the Pho
In a bowl, place a portion of cooked noodles, top with raw sliced beef, and ladle the hot broth over. The heat from the broth will cook the beef.

Garnish and Enjoy
Garnish with fresh basil, bean sprouts, lime juice, and jalapeños to taste. Serve immediately.
