    Prepare the Pork

    In a large pot, heat oil over medium heat. Add the pork shoulder and sear on all sides until browned. Add garlic, cumin, salt, and black pepper, then cover with water and simmer until the pork is tender (about 2 hours). Shred the pork once cooked.

    Make the Sauce

    Roast the red bell peppers until charred, then peel and remove seeds. Blend the roasted peppers with vinegar, salt, and a bit of water until smooth to create the sauce.

    Assemble the Tortas

    Slice the sub rolls in half and spread a layer of refried beans on the bottom. Top with shredded pork and a generous amount of the red pepper sauce. Add thinly sliced onions on top.
