    Prepare the Poblano Peppers

    Roast the poblano peppers over an open flame until the skin is charred. Place them in a plastic bag to steam for about 10 minutes, then peel, seed, and slice them into strips.

    Prepare the Rice and Beans

    Cook rice according to package instructions. Heat black beans in a saucepan and season with salt to taste.

    Assemble the Enchiladas

    Warm the corn tortillas in a skillet with a little olive oil. Fill each tortilla with a portion of the roasted poblano strips and Monterey Jack cheese. Roll them up and place them seam-side down in a baking dish.

    Add Green Sauce

    Pour the green sauce over the rolled enchiladas in the baking dish, ensuring they are well covered.

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas for about 15-20 minutes, or until the cheese is melted and bubbly.

    Remove from the oven and top with sliced avocado, a generous dollop of sour cream, and crumbled cotija cheese. Serve with rice and beans on the side.
