Method

Preparation of Corn Husks

    Soak the corn husks in warm water for about 30 minutes until they are pliable.

Making the Dough

    In a large mixing bowl, combine masa harina, baking powder, and salt.

    Add the vegetable shortening and mix until crumbly.

    Gradually add the chicken or vegetable broth, mixing until a smooth dough forms.

Assembling Tamales

    Take a soaked corn husk and spread about 1/4 cup of dough onto the center of the husk.

    Add 2 tablespoons of your choice of filling (chicken with green salsa or pork with red salsa) on top of the dough.

    Fold the sides of the husk over the filling and then fold up the bottom to seal.

    Repeat with remaining husks and filling.

Cooking Tamales

    Place the tamales upright in a steamer pot.

    Steam for about 1 to 1.5 hours, adding water as necessary to keep the pot from drying out.

    Tamales are done when the dough pulls away from the husk easily.
