Prepare Carne Asada
Season the carne asada with garlic powder, onion powder, salt, and black pepper. Grill the carne asada over medium-high heat until cooked to your liking, about 5-7 minutes on each side. Remove and let rest before slicing thinly.

Grill Jalapeños
While the meat is resting, grill the jalapeños until charred and softened, about 5 minutes. Remove from heat and slice in half, removing seeds if desired for less heat.

Melt the Cheese
In a cast-iron skillet or an oven-safe dish, combine Monterey Jack and Cheddar cheese. Place the skillet in the oven and broil on high for 3-5 minutes, until the cheese is melted and bubbly.

Assemble Queso Fundido
Once the cheese is melted, remove from the oven and top with sliced carne asada and grilled jalapeños. Return to the oven for an additional 2 minutes to heat through.

Sprinkle with fresh cilantro and serve immediately with tortilla chips or warm tortillas.
