    Prepare the Pork Shank

    In a large pot, heat the olive oil over medium heat. Add the pork shank, season with salt and black pepper, and sear until browned on all sides, about 10 minutes. Remove from pot and set aside.

    Sauté Aromatics

    In the same pot, add the minced garlic and chopped onion. Sauté until the onion is translucent, about 5 minutes.

    Cook Tomatillos and Chili

    Add the quartered tomatillos and chopped green chili peppers to the pot. Cook for another 5 minutes until the tomatillos soften.

    Make the Pipian Sauce

    Add the pumpkin seeds to the pot and toast them for 2-3 minutes. Then, add the chicken broth and bring to a simmer. Stir in the chopped cilantro. Remove from heat and let cool slightly. Blend the mixture until smooth.

    Combine Pork and Sauce

    Return the pork shank to the pot and pour the pipian sauce over it. Cover and simmer on low heat for about 1.5 hours or until the pork is tender.

    Cook the Rice

    While the pork is cooking, prepare the rice according to package instructions.

    Serve

    Once the pork is tender, serve it with rice and cooked black beans, drizzling extra pipian sauce over the top.
