1. Prepare the Chicken

Season the chicken breasts with olive oil, salt, pepper, and cumin. Let them marinate for at least 30 minutes.

2. Cook the Chorizo

In a skillet over medium heat, cook the chorizo until browned and fully cooked. Remove from skillet and set aside.

3. Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F / 75°C).

4. Grill the Onions

Slice the onions into rings. Grill the onions until they are nicely charred and softened, about 5-6 minutes.

On a serving plate, place the grilled chicken breasts, top with chorizo, grilled onions, and sprinkle the cheese on top. Let it melt slightly from the heat.

6. Serve
