Prepare the Pasta
In a large pot, bring salted water to a boil. Add the spaghetti pasta and cook according to package instructions until al dente. Drain and set aside.

Roast the Poblano Peppers
While the pasta is cooking, roast the poblano peppers over an open flame or under a broiler until the skin is charred. Place them in a plastic bag for about 10 minutes, then peel off the skin, remove the seeds, and chop the peppers.

Make the Poblano Sauce
In a blender, combine the roasted poblano peppers, heavy cream, garlic cloves, salt, and black pepper. Blend until smooth.

Cook the Sauce
In a large skillet, heat olive oil over medium heat. Pour in the poblano sauce and simmer for about 5 minutes, stirring occasionally.

Combine Pasta and Sauce
Add the cooked spaghetti to the skillet with the poblano sauce. Toss well to coat the pasta in the sauce. Stir in the grated cheese until melted and creamy.

Add Protein
If desired, add grilled chicken or shrimp to the pasta and toss to combine. Cook for an additional 2-3 minutes to heat through.

Serve the Pasta Poblano hot, garnished with extra cheese or fresh herbs if desired.
