    Prepare Ingredients

    Gather and dice all vegetables: onion, tomato, bell pepper, and jalapenos. Slice the mushrooms and set aside. If using shredded beef or chorizo or ham, prepare it as needed.

    Beat Eggs

    In a mixing bowl, crack the eggs and beat them until well combined. Season with salt and black pepper to taste.

    Sauté Vegetables

    In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion, bell pepper, and jalapenos. Sauté for about 3-4 minutes until they start to soften.

    Add Mushrooms and Tomatoes

    Add the sliced mushrooms and diced tomatoes to the skillet. Cook for an additional 2-3 minutes until the mushrooms are tender.

    Add Meat

    Stir in the choice of meat (shredded beef, chorizo, or ham) and cook for another 2 minutes until heated through.

    Pour in Eggs

    Pour the beaten eggs over the sautéed vegetables and meat mixture. Let it cook for a minute without stirring to allow the eggs to set at the bottom.

    Add Cheese

    Sprinkle the shredded cheddar cheese over the top. Use a spatula to gently lift the edges of the omelet as it cooks, allowing uncooked egg to flow underneath.

    Once the eggs are fully cooked and the cheese is melted, fold the omelet in half and serve immediately.
