Chimichanga Preparation

Prepare the Filling
In a mixing bowl, combine the shredded chicken or ground beef with cheese, salt, and pepper. Mix well.

Assemble the Chimichangas
Take a flour tortilla and place a portion of the filling (about 1/4 cup) in the center. Add a spoonful of refried beans, some rice, and fold the sides over the filling, then roll it up tightly.

Fry the Chimichangas
In a large skillet, heat the oil over medium heat. Once hot, carefully add the chimichangas (2-3 at a time, depending on the size of your skillet) seam side down. Fry for about 3-4 minutes on each side until golden brown and crispy.

Serve
Remove the chimichangas from the oil and place them on paper towels to drain excess oil. Serve with shredded lettuce, diced tomatoes, and a dollop of sour cream on the side.
