Fish Preparation

Prepare the Fish
Rinse the tilapia thoroughly under cold water. Pat dry with paper towels. Season the fish inside and out with salt and black pepper.

Fry the Fish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the tilapia. Fry for about 5-7 minutes on each side, until golden brown and cooked through. Remove from oil and place on paper towels to drain.

Make the Sauce
In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the chopped tomatillos, cilantro, lime juice, chili powder, and salt. Cook until the tomatillos are soft and the mixture is well combined, about 5-7 minutes.

Serve
On a plate, serve each fried tilapia with a generous drizzle of huichol sauce. Accompany with a side of white rice, black beans, and a fresh salad of shredded lettuce and diced tomatoes.
