Prepare the Filling
In a bowl, mix the shredded chicken with salt and pepper to taste. Set aside.

Prepare the Tortillas
Heat the vegetable oil in a skillet over medium heat. Lightly fry each corn tortilla for about 15 seconds on each side until pliable. Remove and drain on paper towels.

Assemble the Flautas
Take a tortilla, place about 2 tablespoons of the chicken filling in the center, and roll it tightly. Secure with a toothpick if needed. Repeat with remaining tortillas.

Fry the Flautas
In the same skillet with oil, fry the flautas in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Serve
Place flautas on a serving plate, top with shredded lettuce, diced tomatoes, a dollop of sour cream, avocado sauce, and sprinkle with crumbled cotija cheese.
