Marinate the Beef
In a large pot, combine the beef chuck roast, beef broth, guajillo chiles, cumin powder, garlic cloves (minced), and diced onion. Bring to a boil, then reduce heat to low and simmer for 2-3 hours, or until the beef is tender and easily shredded.

Prepare Avocado Sauce
In a blender, combine the ripe avocado, lime juice, and salt to taste. Blend until smooth and creamy. Set aside.

Fry the Flautas
In a large pan, heat the oil over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.

Serve
Serve the flautas hot, topped with avocado sauce, sour cream, queso fresco, and fresh cilantro. Accompany with a side of consomme from the barbacoa broth.
