Preparation

    Marinate the Beef

    In a large pot, combine the beef chuck roast, beef broth, guajillo chiles, cumin powder, garlic cloves (minced), and diced onion. Bring to a boil, then reduce heat to low and simmer for 2-3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot to absorb the flavors from the broth. Let it cool slightly.

    Prepare Avocado Sauce

    In a blender, combine the ripe avocado, lime juice, and salt to taste. Blend until smooth and creamy. Set aside.

    Assemble the Flautas

    Heat a small amount of oil in a skillet. Place a corn tortilla in the skillet to soften it, then fill it with a small amount of the shredded barbacoa and roll it tightly. Secure with a toothpick if necessary.

    Fry the Flautas

    In a large pan, heat the oil over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.

    Serve

    Serve the flautas hot, topped with avocado sauce, sour cream, queso fresco, and fresh cilantro. Accompany with a side of consomme from the barbacoa broth.
