Flan Preparation

Prepare the Caramel
In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves. Allow it to boil without stirring until it turns a golden brown color. Quickly pour the caramel into the bottom of a round baking dish, tilting to coat the bottom evenly. Set aside to cool.

Combine and Bake
Pour the flan mixture over the cooled caramel in the baking dish. Place the baking dish in a larger baking pan filled with hot water (water bath). Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes or until the flan is set.

Cool and Refrigerate
Remove the flan from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Serve
To serve, run a knife around the edges of the flan and invert it onto a serving plate. Drizzle with chocolate sauce, top with whipped cream, and garnish with maraschino cherries.
