Preparation

    Sauté the Tilapia

    In a large skillet, melt 2 tablespoons of butter over medium heat. Season the tilapia fillets with salt and pepper, then add them to the skillet. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining butter. Add sliced bell peppers and diced tomatoes. Sauté for about 5-7 minutes until vegetables are tender. Stir in chipotle sauce and mix well.

    Cook the Shrimp

    In another pan, heat a little butter over medium-high heat. Add shrimp and sauté for about 3-4 minutes until they turn pink and are cooked through. Season with salt and pepper to taste.

    Serve

    On a plate, serve the sautéed tilapia topped with the bell pepper and tomato mixture. Add a side of chipotle shrimp, white rice, and salad mix. Offer tortillas or garlic toast on the side.
