    Prepare the Filling

    In a bowl, combine the crumbled queso fresco with the diced onion. Season with salt and pepper to taste. Set aside.

    Assemble the Entomadas

    Warm the corn tortillas in a skillet or microwave until pliable. Take one tortilla, fill it with the queso fresco and onion mixture, and roll it up. Repeat with the remaining tortillas.

    Prepare the Sauce

    In a saucepan, heat the olive oil over medium heat. Add the tomato sauce and simmer for 5 minutes. Adjust seasoning with salt and pepper.

    Combine and Heat

    Place the rolled entomadas in a baking dish, pour the tomato sauce over them, and bake in a preheated oven at 180°C (350°F) for about 10 minutes.

    Serve

    Serve the entomadas hot, topped with sour cream, alongside a serving of rice and beans.
