    In a skillet, heat olive oil over medium heat. Add shredded chicken, salt, and black pepper. Stir to combine and heat through, about 5 minutes.

    Warm the Tortillas

    In another skillet, lightly warm the corn tortillas on both sides until pliable. Keep them warm in a towel.

    Assemble the Enchiladas

    Take a warm tortilla, add a portion of the chicken filling, roll it up, and place it seam-side down in a baking dish. Repeat with remaining tortillas and chicken.

    Add Tomatillo Sauce

    Pour the green tomatillo sauce over the assembled enchiladas, ensuring they are well covered.

    Bake the Enchiladas

    Preheat your oven to 375°F (190°C). Bake the enchiladas for 20 minutes until heated through.

    Garnish and Serve

    Remove from the oven and top with cotija cheese, sour cream, sliced avocado, and chopped cilantro. Serve with cooked rice and beans on the side.
