Preparation

    Cook the Vegetables

    In a skillet, heat olive oil over medium heat. Add diced carrots and potatoes, season with salt and pepper, and sauté until tender, about 10-12 minutes. Set aside.

    Prepare the Enchiladas

    Preheat the oven to 375°F (190°C). In a large baking dish, spread a thin layer of red enchilada sauce. Take a corn tortilla, fill it with shredded cheese, roll it up, and place it seam-side down in the dish. Repeat with remaining tortillas.

    Add Sauce and Toppings

    Pour remaining red enchilada sauce over the rolled tortillas. Top with the sautéed carrots and potatoes, and sprinkle crumbled cotija cheese on top.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

    Serve

    Serve the enchiladas hot, topped with sour cream, alongside cooked rice and refried beans.
