Prepare the Filling
In a skillet, heat 1 tablespoon of oil over medium heat. If using ground beef, add it to the skillet along with salt and pepper. Cook until browned. If using shredded chicken or cheese, simply heat until warm.

Prepare the Rice and Beans
Cook the rice according to package instructions. Heat the beans in a separate pot until warm.

Fry the Tortillas
In another skillet, heat the remaining tablespoon of oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until soft and pliable.

Assemble the Enchiladas
Fill each tortilla with the prepared filling and roll them up. Place them seam-side down in a baking dish.

Add the Sauce
Pour the red, green, or mole sauce over the rolled enchiladas, ensuring they are well covered.

Garnish the enchiladas with the cooked eggs on top. Serve hot with rice and beans on the side.
