Prepare the Filling
In a mixing bowl, combine the shredded chicken or beef with taco seasoning, salt, and pepper. Mix until well combined.

Assemble the Chimichangas
Lay out a flour tortilla. Place 1/2 cup of the filling and 2 tablespoons of refried beans in the center of the tortilla. Fold the sides in and roll it up tightly.

Fry the Chimichangas
Heat oil in a deep skillet over medium heat. Once hot, carefully add the chimichangas, seam side down. Fry until golden brown and crispy, about 3-4 minutes on each side.

Prepare the Topping
While the chimichangas are frying, prepare the cheese sauce in a separate pot or microwave.

Serve
Once fried, remove chimichangas from the oil and place them on paper towels to drain. Serve topped with cheese sauce, lettuce, and a dollop of sour cream.
